Crystal's Healthy Hamburger Helper


This is a recipe I have been perfecting over the past 2 years I hope you enjoy :)

Crystal's Healthy Hamburger Helper

1 lb lean ground beef or turkey
dash Lawry's salt
2 tsp minced garlic
1 med diced green pepper
1 med diced onion
1 can mushrooms, pieces and stems
1 bag frozen peas or 1 quart green beans
2 cans fat free mushroom soup
2 cups 2% Velveeta cheese melted in 1 cup fat free milk
3 cups whole wheat elbow macaroni or whole wheat soup noodles

Preheat oven to 200 degrees. In frying pan sauté onion, green pepper, mushrooms, minced garlic in 1 Tbs olive oil. Add ground beef and Lawry's salt. Meanwhile boil pasta according to directions. In a microwave safe bowl tear up Velveeta cheese and add some milk. Microwave and stir until melted. In casserole dish combine the pasta, hamburger mixture, peas or green beans, mushroom soup, and melted cheese. Stir until evenly coated. Put casserole in heated oven for 30-35 minutes stirring occasionally.

* You may add a can of cheddar cheese soup instead of Velveeta if you are pressed for time
