Pinwheel Appetizers

reat appetizer to serve at your holiday parties!

Beef & Cheese Pinwheels

12 oz thinly sliced deli roast beef (or turkey if you so desire)
4 oz package herb flavored cream cheese ( I use garden vegetable flavor)
4 large flour tortillas (about 10 inches)
2 cups spinach leaves (about 20 leaves)
7 oz jar of roasted red peppers, rinsed and drained

Spread cheese evenly over one side of each tortilla. Place deli meat over cheese leaving 1/2 inch border around edges. Place spinach leaves over beef. Arrange peppers down center, over spinach. Roll up tightly and wrap in plastic wrap. Refrigerate at least 30 minutes to overnight before serving. To serve, cut each roll crosswise into 8 slices. Arrange cut side up on serving platter. Makes 32 appetizers.

Tips : Red peppers must be rinsed and dried to prevent soggy tortillas. Be sure to wrap tightly to prevent tortilla from drying out. Slice as close to serving time as possible.

Easy Bread Bowls

Make a delicious bread bowl to serve your soup and stews.

Easy Bread Bowls
1 loaf (1 lb ) frozen bread dough - thawed
1 Tbs olive oil
1 tsp dried basil leaves
1/2 tsp garlic salt

Lightly grease outsides of 6 (10 oz) custard cups with shortening ( can use olive oil as long as you put on not use cooking spray). Place cups upside down on large cookie sheet. Divide dough into 6 equal pieces. Shape each piece into a ball, then pat into 6 inch round pieces. Place rounds over bottoms of custard cups. Brush dough w/ oil. Sprinkle with basil & garlic salt. Cover; let rise in warm place for 20 minutes. Heat oven to 350 degrees. Bake 16 to 20 minutes. Cool 5 minutes. Remove from cups and place right side up on cooling rack (interiors of bowls may be slightly moist.

* I usually use olive oil on the outside of the bowls and sprinkle it with basil and garlic and then put the bread dough on it pretty quickly afterward so the oil doesn't drip off of it too much.

** When storing but into bowl so sides are supported.

Apricot Chicken

I don't have a picture but this is a great dish for a cold day and its not just your ordinary chicken :)

Apricot Chicken

3-6 Chicken breast, skinned
21 oz apricot pie filling
1 Tbs lemon juice
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 cup pecan halves


Preheat oven to 375 degrees. Arrange chicken in a 9x13 pan. Sprinkle w/ salt and pepper. In a mixing bowl combine remainder of ingredients. Pour over chicken. Cover and bake for 55-60 minutes. Serve over hot cooked rice.

Christmas Rollout Cookies

In the spirit of the holidays I thought I would share my favorite recipe for roll out sugar cookies. I got this recipe from my aunt Rhoda Weldy :)

Roll Out Christmas Sugar Cookies
3 1/2 cup flour
1 tsp baking powder
1 cup margarine or butter (softened)
8 oz cream cheese (softened)
2 cups sugar
1 egg
2 tsp vanilla
1/2 tsp almond extract ( make sure if anyone is allergic to use imitation
instead of pure)

Mix all together and refrigerate until chilled. Divide into thirds and roll out. Cut out desired shapes. Place on greased baking sheet, add sugar sprinkles if so desired, and put them into the oven for 8 - 10 minutes at 350 degrees.

These have great flavor on their own that you don't need frosting but they can be frosted as well. Makes a great way to entertain little ones when they get restless indoors!

Chocolate Chip Oatmeal Cookies

Chocolate Chip Oatmeal Cookies

3 cups flour

2 tsp baking soda

2 tsp salt

2 cups shortening

1 1/2 cups brown sugar

1 1/2 cups white sugar

4 eggs

2 Tbs Hot water

1 lb Chocolate chips (semi sweet)

4 cups Oatmeal (instant)

2 tsp vanilla

Cream shortening, sugar, and eggs. Add water and dry ingredients, mix well. Add oatmeal, chips, and vanilla. Drop by teaspoon on cookie sheet and bake at 350 degrees for 9-12 minutes.

"Applebee's Hot Artichoke & Spinach Dip"

Ok, so I found this recipe online and its amazing :) Sorry no picture yet.

Applebee's Hot Artichoke & Spinach Dip

1 10 oz box frozen chopped spinach, thawed
1 14 oz can artichoke hearts, drained and roughly chopped
1 cup shredded parmesan romano cheese mix
1/2 cup shredded mozzarella cheese
10 oz prepared alfredo sauce
1 tsp minced garlic
4 oz softened cream cheese
dash pepper, optional

Preheat oven to 350 degrees. Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish 8x8. Bake for 25-30 minutes or until cheese is bubbling and melted. Serve with chips or bread.

Crystal's Healthy Hamburger Helper

This is a recipe I have been perfecting over the past 2 years I hope you enjoy :)

Crystal's Healthy Hamburger Helper

1 lb lean ground beef or turkey
dash Lawry's salt
2 tsp minced garlic
1 med diced green pepper
1 med diced onion
1 can mushrooms, pieces and stems
1 bag frozen peas or 1 quart green beans
2 cans fat free mushroom soup
2 cups 2% Velveeta cheese melted in 1 cup fat free milk
3 cups whole wheat elbow macaroni or whole wheat soup noodles

Preheat oven to 200 degrees. In frying pan sauté onion, green pepper, mushrooms, minced garlic in 1 Tbs olive oil. Add ground beef and Lawry's salt. Meanwhile boil pasta according to directions. In a microwave safe bowl tear up Velveeta cheese and add some milk. Microwave and stir until melted. In casserole dish combine the pasta, hamburger mixture, peas or green beans, mushroom soup, and melted cheese. Stir until evenly coated. Put casserole in heated oven for 30-35 minutes stirring occasionally.

* You may add a can of cheddar cheese soup instead of Velveeta if you are pressed for time

Reese Pudding Cup

Ok so this is a recipe I came up with a few weeks ago. Let me know if you like it :)

Reese Pudding Cup

2 boxes instant cheesecake pudding
2 boxes instant chocolate pudding
4 Tbs peanut butter
24 reese peanut butter cups
2 cups cool whip
8 cups milk

Freeze Reese Peanut Butter Cups. Prepare chocolate pudding according to the directions on the box. Chill in refrigerator. Prepare cheesecake pudding according to the directions. While beating with mixer add 4 Tbs peanut butter. Let set for about 5 minutes in refrigerator. Add 2 cups cool whip to the peanut butter cheesecake pudding. Set aside. Take 12 peanut butter cups and crush into little pieces and set aside. Then taking your cup layer chocolate pudding, then cheesecake mixture, crushed reese peanut butter cup, chocolate pudding, cheesecake mixture. Then for the finishing touch add 1 whole peanut butter cup on top. :) Refrigerate until ready to serve. Makes 12 servings.

Bake your own Bread

Ok, so I have not done this recipe but my sister Dawn has and loved it and recommended it, so I'm letting her be a guest submitter :) This recipe can be found at The pictures were submitted by my sister of the bread she made from this recipe.

This is the easiest one-loaf yeast bread you will ever bake. The Super Easy Bread for Beginners recipe produces a soft crust and a moist center using the most basic ingredients that can be found in most kitchens.
Prep Time: 3 hours
Cook Time: 45 minutes
Total Time: 3 hours, 45 minutes

• 3/4 cup warm water
• 1 package active dry yeast
• 1 tsp salt
• 1-1/2 tbsp sugar
• 1 tbsp vegetable shortening
• 1/2 cup milk
• 3 cups all-purpose flour, approximately

1. In large bowl, add the warm water. Slowly stir in dry yeast. Continue
to stir until yeast is dissolved.
2. Add salt, sugar, shortening, and milk to bowl. Stir.
3. Mix in the first 2 cups of flour.
4. If needed, begin adding more flour, one tablespoon at a time, until the
dough chases the spoon around the bowl.
5. You do not need to use up all the flour called for in this recipe, or you
may need more flour than called for. The amounts vary depending on many
factors, including weather, which is why most bread recipes only give an
approximate amount of flour needed.
6. Turn dough out onto floured board and knead, adding small spoonfuls of flour
as needed, until the dough is soft and smooth, not sticky to the touch.
7. Put dough in buttered bowl, turn dough over so that the top of dough is
greased. Cover and let rise in warm spot for 1 hour.
8. Punch down dough. Turn out onto floured board and knead.
9. Preheat oven at 375 degrees F.
10. Form dough into loaf and set in buttered bread pan. Cover and let rise for
about 30 minutes.
11. Score dough by cutting three slashes across the top with a sharp knife. Put
in oven and bake for about 45 minutes or until golden brown.
12. Turn out bread and let cool on a rack or clean dishtowel.


Ok, sorry it has been awhile since I've been able to upload a recipe, mainly because I've been to busy too cook. So as soon as I can get around to cooking again I will upload more recipes. In the meantime, my dear sister has given me a recipe she has tried so I will upload that for you. :)

Broccoli Rice Casserole

Broccoli Rice Casserole

3 cups Minute rice, uncooked
1 cup diced celery
1 cup chopped onion
16 oz cheese whiz
1 stick butter, softened
2 cans cream of mushroom soup
16 oz frozen chopped broccoli

Spray 9 x 13 pan with cooking spray. Mix ingredients and bake at 350 for 30-35 minutes.

* can add chicken to the dish
** can replace cheese whiz with melted velveeta cheese sauce

Crystal's Baked Pork Chops

Crystal's Baked Pork Chops

6 bone in pork chops,thawed
2 cans cream of mushroom soup or cream of chicken soup(your preference)
2 tsp minced garlic
3/4 cup water
1/2 cup flour
1 tsp lawry's salt

Mix lawyry's salt and flour in a bowl. In another bowl, mix soup of your choice, minced garlic, and water. Coat pork chops in flour mixture and place in greased baking pan. Pour soup mixture over chops. Bake for 1 hour at 350 degrees.

*this is an original recipe I have been tinkering with so let me know if you have any suggestions or comments :)

** I serve this with the Broccoli Rice Casserole because they bake at the same temp so it is pretty easy to bake at the same time, but if you do bake at the same time add about 10 extra minutes to the cooking times for both.

Chicken Salad

Ok so this is a very yummy chicken salad but you must be brave and try it. The ingredients may sound strange at first but I find it very yummy. I got this recipe from my boss.

Chicken Salad

1 cup grapes, halved
2 stalks celery, chopped
1/4 cup red onion, diced
1/3 bunch fresh cilantro, chopped
2 cans chicken
mayonnaise to coat
salt to taste

You can eat this on its own or you can eat it on a crescent or whatever you think would taste good with it. :) I hope you will all enjoy

Crab and Spinach Casserole

This is another very easy casserole dish but definitely not your ordinary casserole. Great for something a little different than usual. I got this recipe from Betty Crocker's quick and easy Cook book.

Crab and Spinach Casserole

2 cups gemelli (twist) pasta
1 pkg(1.8 oz) leek soup mix
8 oz refrigerated imitation crab meat chunks
2 cups baby spinach, stems removed
1/4 cup shredded Parmesan cheese

Preheat oven to 350 degrees. Spray 2 quart casserole or square baking dish. Cook and drain pasta as directed on package. While pasta is cooking, mix soup mix and milk in saucepan. Heat to boiling, stirring constantly. Cut up larger pieces of crab meat if desired, Mix pasta, crab meat, and spinach in baking dish. Pour soup mixture over pasta mixture; stir gently to mix. Spread evenly. Sprinkle with cheese. Bake uncovered about 20 minutes or until bubbly and light golden brown. Makes 4 servings.

*for the crab you can buy the crab meat in leg style and then cut it up if you prefer it that way

Gourmet Potatoes

Gourmet Potatoes

6 medium potatoes
2 cups shredded cheddar cheese
1/4 cup butter
1 1/2 cup sour cream
2 Tbs milk
1/3 cup chopped onion
1 tsp salt
1/4 tsp pepper
dash paprika (optional)
2 Tbs butter

Cook potatoes in skin with a little salt. Cool, peel, and shred. In saucepan over low heat combine cheese and 1/4 cup butter. Stir until melted. Remove from heat. Blend in sour cream, milk, onion, and seasonings. Fold in potatoes, turn into 2 quart greased casserole dish. Put some shredded cheese on top and dot with 2 tablespoons of butter. Sprinkle with paprika. Bake uncovered at 350 degrees for 30 minutes.

* Freezes well for later use.

** For quicker, easier gourmet potatoes, you can use frozen hashbrowns instead of cooking your own potatoes.

Baked Parmesan Risotto


1/2 cup grated parmesan cheese
1/4 cup chopped onion
2 cups milk
1 can condensed cream of chicken soup
1 cup instant long grain white rice
1/4 tsp salt
1/8 tsp ground black pepper

additional parmesan cheese and fresh parsley for garnish (optional)

Preheat oven to 375. Lightly spray a glass 8 x 8 pan. combine all ingredients and pour into baking pan. Bake 35-40 minutes or until bubbly around edges and all liquid is absorbed. sprinkle with additional parmesan cheese and parsley, if desired. ( I double the ingredients for a 9 x 13 pan. Very easy to make and very yummy!

Prep time 10 minutes Bake time 40

* I usually serve this as a side to the Chicken and Broccoli Wreath Recipe

Hellmann's Parmesan Crusted Chicken

This recipe is very simple,quick, and super easy to make and is great with any basic side such as salads, pototoes, rice, steamed vegetables, etc... This makes a very moist chicken with a very low cooking time so its great for people with busy schedules. Prep time is about 10 to 15 minutes and cooking time is 20-25 minutes.

Hellmann's Parmesan Crusted Chicken:

1/2 cup hellmann's mayonnaise
1/4 cup grated parmesan cheese
4 boneless, skinless chicken breast, thawed
4 tsp italian seasoned dry bread crumbs

Combine mayonnaise and parmesan cheese. Spread onto chicken,(I do a coat on both sides), then coat with italian bread crumbs. Bake at 425 degrees for 20-25 minutes in greased glass baking pan.

* you can use light mayo to make it lower fat and use plain bread crumbs with italian seasoning added to it if you can't find it in the stores

Chicken & Broccoli Wreath

Chicken and Broccoli Wreath


2 cups coarsely chopped cooked chicken
1 1/2 cups chopped fresh broccoli
1 cup shredded cheddar cheese
1/2 cup diced red bell pepper
1/3 cup mayonnaise
2 tsp dried dill weed
1/4 tsp salt
1 garlic clove
1 egg white, lightly beaten
1/4 cup slivered almonds

Preheat oven to 375. In bowl, combine chicken, broccoli, cheese, bell pepper, mayonnaise, dill weed, salt and garlic; mix well.

Scoop filling over desired shape (shown below); finish shape as directed. Brush with egg white. Sprinkle with almonds. Bake 25-30 minutes or until golden brown. Makes 8 servings


2 packages of refrigerated crescent rolls

Seperate into 16 triangles. Arrange 8 triangles on a large round stone with wide ends 3 inches from edge of baking stone and points towards the outside. (points will extend off the edge of the baking stone.) Arrange remaining triangles in center of baking stone, matching wide ends with triangles already in place. (points will overlap in center.) Press seams of triangles where wide ends meet, creating a smooth surface for filling. Do not seal center triangles. Only seal about 2 or 3 inches wide. Using a scoop, scoop filling over dough in a continuous circle. Beginning with last triangle placed in center of baking stone, bring point of triangle straight across filling. Next bring point of opposite outside triangle diagonally across filling, covering point of previous triangle. (filling will show). Repeat, overlapping points of inside and outside triangles to form a wreath. Tuck last end under first. Continue as recipe directs above.

*This dish is simple and easy. Filling can be made the day before if pressed for time and the sandwiches are good warm or cold as leftovers.

New Blog

Ok for everyone out there who are wanting new fun recipes I've decided to start posting mine on this blog. So when I experiment with a recipe and it turns out successful (fingers crossed) I will try to take a pretty picture and post it on here. Hope you all will be courageous and try some of these fabulous recipes. I will also try to give you a healthier version of all my recipes ;)
